we are proud to announce: our chef de cuisine, Thomas Schanz, has been named chef of the year 2025 by mr. Jürgen Dollase of the Frankfurter Allgemeine Zeitung (FAZ)!
“at first glance, the story of Thomas Schanz resembles the traditional — though not very often encountered — culinary fairy tale: the son of the house also becomes a cook, trains with three-star greats such as Harald Wohlfahrt, Klaus Erfort and Helmut Thieltges, takes over the family business and, in a short time, achieves the profession’s highest honor. in fact, Schanz remains full of energy. his path is already adorned with classics such as truffle foam in an egg, potential classics like an exceptionally nuanced pot-au-feu of rabbit, a brilliant ‘rose-cooked wild gilt-head bream with sorrel and caviar’, and again and again new avenues such as ‘coal fish with radish, cardamom, black tea essence and rosemary water’. that alone is worth the journey — as they say at Michelin.”

wow! thomas' lifelong dream comes true and he receives his third star in the "guide michelin".
ralf flinkenflügel, the editor-in-chief of the "guide michelin", is quoted in the F.A.Z. as follows:
"after years of learning on the road (...), schanz set up his own restaurant in his hometown and has since improved year after year with impressive determination - without a sponsor or patron behind him, but entirely on his own in his family business. if he were a football player and not a chef, his skills would be comparable to those of lionel messi."
